Her two companion wolves (the two feeding on the horse) are going to eat the man. She won’t – but her loyalties lie with the pack first. Her husband is the prey and must die.
If her husband had been her first concern she would’ve explicitly warned him and confessed her ability to change shape.
Two families run opposing paths and Jessica had to choose. She gave him the quickest death she could.
The last line implies a religious aspect to the couple – and increases the depth of her concealed condition.
