Sorry to kick off with a bit of criticism, but here goes anyway. I get the feeling that this idea has already been explored a number of times before, and this take isn’t really all that different.
The mince-pie thing is interesting but seems to be something of an aside to the main thrust of the piece which seems to be focussed on gore for its own sake.
Santa needs a reason for doing what he does. Even serial killers do what they do for a reason. For the moment, we cannot see why Santa is pulling the eyes out of hapless elves. What is driving him to be so cruel, what gain does he see from the way he treats his staff, and why does he put eyes in pies?
Yes, I see that. Why is he crazy? What made him crazy, what pushed him over the edge? A believable backstory is what can distinguish a great writer from a mediocre “it just is, OK?” writer.
